👩🍳 Instructions
1. Prepare the vegetables
Peel the potatoes, carrot, and zucchini, then cut them into small cubes. Finely chop the onion.
2. Sauté
In a pot, heat the oil or butter. Add the onion and cook until soft and slightly translucent.
3. Cook
Add all the vegetables and stir. Pour in the water or broth.
Let it cook on medium heat for about 20 minutes, until the vegetables are tender.
4. Blend
Use a blender (or hand blender) to blend the soup until smooth and creamy.
5. Finish
Add the milk or cream, mix well, and adjust salt and pepper.
Let it heat for another 1–2 minutes (don’t boil too much).
🍽️ Serving
Serve hot in bowls, topped with fresh dill or parsley and a drizzle of olive oil 👌
💡 Tips
- For a thicker soup: use less liquid
- For a lighter soup: add more broth or water
- You can add shredded cooked chicken to make it more filling
